Our Products

We, Iio-Jozo, are a vinegar brewery in the north from Kyoto, Japan.

We are proud of our own product, rice vinegar and its applied-product, which we create from the organic rice, which we grow by ourselves without any pesticide.

Rice Vinegar

Jun-mai Fujisu

Jun-mai Fujisu (pure-rice vinegar) is brewed of subsoil water and the rice, which is grown up, at free from pesticide, in our rice field at the peak of Tango-hanto peninsula, where it is free from industrial pollution.
We brew Jun-mai in the same way as we have been doing since 130 years ago, with a fermentation period longer than of usual vinegar.  
We use rice grain at 5 times more than industrial standard, to generate its specific taste and flavor.

●How to enjoy
・It can be used in the same way as ordinary vinegar for all kinds of vinegared dishes.
・We especially recommend it for dishes where vinegar is the key ingredient, such as vinegared dishes, sushi, pickles, dressings, stir-fries, and ethnic dishes.

Fujisu Premium

Fujisu Premium is a rice vinegar Iio-Jozo had researched for 20 years to reach, at the Finest level, which proposes you a rich taste of moderate sourness and gentle flavor, where we use grain at the 8 times more than usual vinegar product.

●How to enjoy
We recommend using it raw in dishes without fire, especially in vinegared dishes, dressings, sushi, and vinegared pickles.

Nigorisu Fujisu Premium (contains acetic acid bacteria)

"Nigorisu" is basically the same as Premium, but contains unfiltered acetic acid bacteria, which makes it turbid compared to the Premium.
LPS (lipopolysaccharide) contained in the acetic acid bacteria, is recently featured as useful against the allergy symptom of human body.
The bacteria itself is of course not alive by the heat sterilization at bottling process.

Vinegar Seasoning

Fuji Sushi Vinegar

We recommend to mix into the freshly cooked rice, the taste of which is reputed as “better than sushi restaurant”.
The honey also makes the rice moist and soft.

●How to enjoy
・It can be used for chirashizushi, nigirizushi, inari-sushi, and any other type of sushi.
・We also recommend a bowl of rice topped with tuna. Simply marinate tuna sashimi in soy sauce and mirin, then sprinkle with chopped green onion and fir nori. It is easy to make, but it is a popular dish.
・It can also be used as a vinegar for overnight pickles of radish, turnip, myoga, etc.

Fuji Temaki-Sushi Vinegar

A specific vinegar for Temakizushi (hand-rolled sushi), a casual-styled sushi which you should enjoy with your favorites on vinegared rice and wrapped in seaweed.

This vinegar is brewed in combination of 2 different rice vinegar and red vinegar which is generated through a fermentation for more than 10years.
Just by mixing it with freshly cooked rice, you can make delicious sushi rice for hand-rolled sushi.

●How to enjoy
・The rice will taste better if it is cooked with a little less water.
This rice goes well with all kinds of ingredients for hand-rolled sushi.
・It can be used as nigirizushi with Edomae ingredients such as tuna zuke, shime saba (mackerel), and vinegared horse mackerel.
・It can also be served on top of vinegared rice with your favorite sashimi for a Kaisen-don (seafood bowl).

Fuji ShabuShabu-ni-Muchu

This sauce is made in combination with Fujisu Premium and an extract from richly flavored scallops. 
The best sauce for the pork shabu-shabu.
(Shabu-shabu is a hot pot dish in which thinly sliced meat is dipped into boiling water and dipped into the sauce.)

●How to enjoy
When the water in the pot boils, add pork loin, spinach, celery, enoki mushrooms, and other ingredients of your choice and heat through.
Put the sauce in a bowl, sprinkle generously with the attached powdered Japanese pepper, and serve with the cooked ingredients.

Fuji Yuzu Ponzu

This vinegar brings a flavor of ripen-citrus fruits (yuzu and kabosu) , where we mixed essence of Kelp and Bonito flakes.
All the seasoning for this vinegar is nothing but natural materials.

●How to enjoy
・Use on chilled tofu, boiled vegetables, gyoza (gyoza dish), dried bonito, salads, etc. Use instead of soy sauce.
・Use “Fuji Yuzu Ponzu” for one-pot dishes and boiled tofu.
・It is also good for grilled fish and grilled meat.
・A healthy hot vegetable salad is also recommended. It is also delicious over quickly boiled vegetables and meat.

Fuji Pickles Vinegar

This vinegar for pickles makes it easy to make delicious pickles by simply pickling raw vegetables.
Cucumber, radish, carrot, turnip, cabbage, celery, yam, zucchini, cherry tomato, bell pepper....
Pickle your favorite vegetables, store in the refrigerator, and they will be ready to eat after a full day.

●How to enjoy
Cut up your favorite raw vegetables, put them in a zipper storage bag, and soak 1/3 of the bag in “Fuji Pickle Vinegar”.
(ex: 300g raw vegetables, 100ml Fuji Pickle Vinegar)
Store in the refrigerator and after one day, it is ready to use.
No need to salt or pre-boil.

Fuji Sunomono Vinegar

Just pour this over prepared ingredients such as vegetables and seaweed, and in no time at all you will have a delicious vinegared dish.
It is especially recommended for those who do not like vinegared foods, as it has a “mild taste” with natural broth.
The natural broth carefully drawn from kelp and dried bonito flakes is combined with “Junmai Fuji Vinegar” for a soft taste.

●How to enjoy
・Pour the vinegar over lightly salted vegetables (cucumbers, carrots, cabbage, turnips, etc.) and seaweed.
・Combine “Fuji Sunomono Vinegar” with oil (sesame oil, olive oil, etc.) to easily make salad dressings.
・You can make a delicious sauce by spreading miso or mayonnaise with “Fuji Sunomono Vinegar”. Add sesame seeds for an even more flavorful finish.

Purple sweet potato vinegar (Plane)

This vinegar is rich in anthocyanin, a type of antioxidant and polyphenol, and is very good for the body.
In addition to being ideal for anti-aging, it is liver-friendly and recommended for people who frequently drink alcoholic beverages.
The ingredients used in this vinegar are grown in Japan without using any agricultural chemicals during the growing period, so you can enjoy it with peace of mind.

●How to enjoy
Dilute 1 tablespoon (15ml) with water or sparkling water to at least 8 times its original volume and drink after meals, avoiding empty stomach.
One 500ml bottle is enough for about one month.
Since it has no peculiar taste, it has been well received as easier to drink than black vinegar.

Purple sweet potato vinegar (with Honey)

This vinegar was created in response to customer requests.
Red sweet potato vinegar is made easier to drink by adding honey.

This black vinegar is brewed of subsoiled water and the rice, which is grown up, at free of pesticide, in our rice field at the peak of Tango-hanto peninsula, where it is free from industrial pollution.

We brew it in the same way as we have been doing since 130 years ago, with a fermentation period longer than of usual vinegar.
Since It is rich in natural and essential amino acids, it makes food more delicious.when added to food.

●How to enjoy
honey or other ingredients to make it easier to drink.
・Dilute with soy milk or cow's milk to make it thicker and easier to drink like yogurt. Vinegar helps calcium absorption, making it a healthier drink.
・It is also delicious when mixed with juice.
