
This black vinegar is brewed of subsoiled water and the rice, which is grown up, at free of pesticide, in our rice field at the peak of Tango-hanto peninsula, where it is free from industrial pollution.
We brew it in the same way as we have been doing since 130 years ago, with a fermentation period longer than of usual vinegar.
