
Jun-mai Fujisu (pure-rice vinegar) is brewed of subsoil water and the rice, which is grown up, at free from pesticide, in our rice field at the peak of Tango-hanto peninsula, where it is free from industrial pollution.
We brew Jun-mai in the same way as we have been doing since 130 years ago, with a fermentation period longer than of usual vinegar.
We use rice grain at 5 times more than industrial standard, to generate its specific taste and flavor.
